› XC Ski Trail GORP

My favorite post-exercise energy grub – most often ingested on the road between Mount Bachelor and Bend, but sometimes also on the way TO the trails… It’s also a great snack for long bike rides and on a hike/trail run.

Prepare a 9x13-inch Pyrex/glass pan

2 Tbs butter
1 Tbs peanut butter
1 ¾ C marshmallows
4 C cereal (use whatever you have, but I like puffed wheat and corn chex, or try a mixture of corn chex/rice chex and cinnamon crispix)
1 C yummies (M&M’s, chocolate chips, chopped nuts, raisins… or better yet – a mixture of all the above)

Melt butter and peanut butter in a large saucepan. Add marshmallows and, over LOW heat, stir until melted. Remove pan from heat and immediately add 4 C of cereal. Add in 1 C of yummies. Turn the mixture into the pan and press out into the corners. Let cool (if you can…) and enjoy.
